"Weeping Cherry" Bad Decisions - Baltimore, MD

Drink Ingredients:
  • 2 oz. of Templeton Rye.
  • 2 oz. DP Cherry Tort Liqueur.
  • 1 oz. Ferreira White Port.
  • Dash of Orange Citrate Bitters.
  • Maraschino Cherry rolled in Malic Acid.
Drink Preparations:
  • Add all of the ingredients to a shaker in order as listed above.
  • Prepare glass by filling it with ice to chill. 
  • Shake ingredients.
  • Dump ice from glass and strain drink into glass. 
  • Garnish with Maraschino cherry rolled in Malic Acid.

"Cardinal" The Willow - Baltimore, MD

Drink Ingredients:
  • 3/4 oz. of Brown Sugar Cinnamon Simple Syrup.
  • 3/4 oz. of fresh squeezed Lemon Juice.
  • 2 oz. of BullDog Gin.
  • 2 dashes of Fee Brothers Cranberry Bitters.

Drink Preparations:
  • Add ingredients to shaker in order as listed above.
  • Add ice to shaker and shake vigorously.
  • Top it off with some soda water and squeeze a lemon peel to release oils into cocktail.
  • Then run around the rim.

 
Sidenote: To make Brown Sugar Cinnamon Simple Syrup:  boil 1 litre of water then add 3-5 cinnamon sticks. Then strain off after it comes to a boil. The water level will be less after boiling and straining. So add equal amount Brown Sugar to the left over water.

              "Water Street Tavern Bloody Mary" - Water Street Tavern - Baltimore,MD



              Drink Ingredients:

              Ingredients for Bloody Mary mix:
              • Tomato Sauce.
              • Pureed Celery.
              • Pureed Green Peppers.
              • Pureed Onion.
              • Pureed Jalapeno.
              • Horseradish.
              • Old Bay.
              • Worcestershire Sauce.
              • Red Flake Pepper.
              Drink Ingredients:
              • 2 oz. of Premium Vodka.
              • Bloody Mary Mix.
              Drink Preparation:
              • Garnish glass with Old Bay.
              • Fill glass with ice.
              • Add the vodka mixed with the Bloody Mary Mix.
              • Spear 1 olive, 2 pickle chips, 1 slice of Green Pepper, 2 slices of Jalepeno, 1 Celery Stalk and 1 thick slice of Applewood Smoked bacon. Place spear into Bloody Mary. 
              • Add 2 pieces of Shrimp Cocktail on side of the glass.

              "Naughty & Nice" The Rye Baltimore,MD




              Drink Ingredients:
              • 1.25 oz. of Sloop Betty Vodka.
              • 1 oz. of Trader Vic's Coffee Liqueur (or Kahlua).
              • 1 oz. of Rumchata.
              Drink Preparations:
              • Add ingredients to a mixing glass or shaker with ice.
              • Shake vigorously, then pour all ingredients (including ice) into an Old Fashioned Glass.
              • Garnish with freshly grated cinnamon.
              • Drink.
              The creator of this cocktail is Jon Blair of The Rye. Jon is very creative behind the bar and quite knowledgeable. So will see more of his cocktails.

              "Fallen Apple" The Willow - Baltimore, MD




              Drink Ingredients:
              • 1 oz. of Cinnamon & Brown Sugar simple syrup.
              • 2 dashes of Colonial Bitters.
              • Chopped Apples - Muddled.
              • Topped with 2 oz. Bourbon.
              Drink Preparations:
              • Add chopped Apples to Old Fashioned Glass.
              • Add Cinnamon & Brown Sugar simple syrup.
              • Add the dashes of Colonial Bitters.  
              • Muddle ingredients and add ice. 
              • Then top with your Bourbon
              Side Note: To make the Cinnamon & Brown Sugar Simple Syrup. Take a litre of water boil with 3-5 cinnamon sticks. Then strain off after it comes to a boil. The water level will less after boiling and straining off. So add the equal amount of Brown sugar to the left over water.

              "The Highbury" The Willow- Baltimore,MD


              Drink Ingredients:
              • 1 ½ oz. of Bulldog Gin.
              • 3/4 oz. Lillet (a brand of French Aperitif Wine)
              • ½ oz. Shiso Honey Syrup. 
              • 2 tsp. of Hibiscus Rose Concentrate
              Drink Preparations:
              • Add ice in cocktail glass to chill.
              • Add ingredients to shaker in order as listed.
              • Add ice and stir.
              • Empty ice from cocktail glass and strain ingredients into cocktail glass.
              • Peel lemon and twist into cocktail then run lemon peel around rim of glass and place peel in cocktail.

              "The First Lady" The Rye - Baltimore, MD

              Drink Ingredients:
              • 2 oz. of Ketel One Vodka.
              • 1 oz. of Combier Creme de Mure Blackberry Liqueur.
              • 1/2 oz. of Freshly Squeezed Lime Juice.
              • 1/2 oz. of Simple Syrup.
              • Ice.
              Drink Preparation:
              • Prepare a cocktail glass by chilling it with ice.
              • Add the Ketel One in a shaker.
              • Add the Combier Creme De Mure Blackberry Liqueur..
              • Add the Freshly Squeezed Lime Juice.
              • Add the Simple Syrup.
              • Add some ice to the shaker, shake vigorously briefly.
              • Remove ice from your chilled cocktail glass, pour your cocktail through a strainer.
              • Garnish with a Lime Wheel, or if you choose fresh Blackberry.

              "Fatal Attraction" Bad Decisions - Baltimore, MD

              Drink Ingredients:
              • 1.5 oz. of El Dorado 12 Rum.
              • 3/4 oz. of Velvet Falernum.
              • 1/2 oz. of Lime Juice.
              • 1 oz. Pineapple Juice.
              • 1 dash of Elemekate Tiki Bitters.
              • Float Passoa Passion Fruit Liqueur.
              • Wray and Nephew Overproof Rum.
              Drink Preparation:
              • Add the El Dorado Rum in a mixing glass.
              • Add the Velvet Falernum to the rum.
              • Add the Lime Juice to the mixing glass.
              • Add the Pineapple Juice to the mixing glass.
              • Add the 1 dash to the mixing glass.
              • shake ingredients with ice.
              • Strain into a hurricane glass with ice.
              • Add Passion Fruit Liqueur.
              • Take half a lime that is carved out place in drink. Pour Overproof rum into lime and carefully lite the rum.

              "Martinez" Bad Decisions - Baltimore,MD


              Ingredients:
              • 2 oz. Old Tom Gin (Ransom)
              • 1 oz. of Sweet Vermouth (Carpano)
              • 1 Dash of Orange Bitters (Gin Barrel Aged) Fee Brothers is a good brand
              • Barspoon Luxardo Maraschino (barspoon is equivalent to a conventional teaspoon) so you do not need to run out and get a barspoon. However, it is a nice addition to your wetbar.
              • Flavored Orange Twist.
              Preparation:
              • Add the 2 oz. of Old Tom Gin in a mixing glass.
              • Add the 1 oz. of Sweet Vermouth to the mixing glass.
              • Add the of Orange Bitters to the mixing glass.
              • Add the Barspoon of Marschino.
              • Add cup of ice to mixing glass then use barspoon to stir ingredients.
              • Strain into Martini glass.
              • Carefully!! use a match to release the oils of the Orange twist.
              • Take Orange twist run around edge of glass and then add to drink. 
              Please do not burn off your eye brows.

              Drink Ingredients:
              • 1 1/2 oz. of Buffalo Trace Bourbon.
              • 3/4 oz. of Clover Honey Syrup.
              • 3/4 oz. of Aperol.
              • 3/4 oz. Fresh Lemon Juice
              Drink Preparations:
              • Add ingredients
              • Shake vigorously
              • Strain over ice in rocks glass
              • Garnish with lemon wedge

              "La Joya Roja"- The Willow - Baltimore,MD


              Drink Ingredients:
              • 3 oz Hakutsuru Junmai sake.
              • 1/2 Domaine De Canton ginger liqueur.
              • 3/4 oz of freshly juiced red beets.
              • mint for garnish.
              Drink Preparations:
              • Pour the sake into a shaker.
              • Add the ginger liqueur.
              • Add the freshly juiced red beets.
              • Once all ingredients are added and stirred with ice, strain into cocktail glass.
              • Take a mint leaf and smack it to release oils then add to cocktail. (if you so choose take mint leaf and run it around the glass rim)
              The brands listed are not necessary, they are the ones that Julia used. The name "La Joya Roja" is Red Jewel in Spanish.               Honey Syrup with Jasmine - The Willow Baltimore,MD

              Drink Ingredients:
              • Equal parts water to honey. You could do 2 to 1 honey water. But equal parts make it easier to pour.
              • I.E. 1 cup of hot water (almost boiling) water to 1 cup of honey. Preferably clover honey, since it adds a nice taste.
              • Jasmine
              Drink Preparation:
              • Add the honey then the water then stir until it combines well.
              • Add only only one or two drops of Jasmine.
              This can be done with any other flavors Orange water, Rose water, and Lavender water.

              "The Parlay" The Willow - Baltimore, MD




              Ingredients:
              • 2 oz. Black Sesame Infused Rum
              • a couple pieces of orange.
              • couple of dashes Angostura Bitters.
              • 1/2 oz. of Agave Syrup.

              Drink Preparations:
              • Add the orange slices to Old Fashioned Glass.
              • Add the dashes of Angostura Bitters.
              • Add the 1/2 oz. of Agave Syrup.
              • Muddle
              • Add the 2 oz. of Black Sesame Infused Rum.
              • Add ice and stir.
              Side Note:
              • Pour 750 ml of white rum in this case Flora De Cana over 10 grams of Black Sesame seeds after you have crushed them with a mortar and a pestle. Allow to steep for three days at rooms temperature.
              • Add to your rum, don't blame me for your hangover.
              Now for that Agave Syrup: Just like any other syrup equal parts: I.E. 1/2 cup of HOT water is 1/2 cup of Agave. Do remember you want HOT water almost boiling. Now of course the taste of syrup (meaning the hint of Agave is personal), so you may want more Agave added than equal parts.

              Simple Syrup with Cayenne Pepper

              Ingredients:
              • Equal Parts sugar to water.
              I.E. 1 cup of hot (almost boiling) water to 1 cup of sugar.

              To add flavor simply add desired spice, extract juice etc. in small portions until it reaches desired flavor.

              For this recipe: 8 oz. of water; 8 oz. of sugar and 1 teaspoon of Cayenne Pepper.

              "Bay Rosa" The Willow - Baltimore,MD



              Drink Ingredients:
              • 1 1/2 oz. Fennel Frond Infused Vodka
              • 3/4 oz. Bay Leaf Infused Syrup
              • 1/2 oz. fresh lemon juice
              • 2 dashes Peychauds bitters
              Drink Preparations:
              • Add ingredients to shaker.
              • Shake vigorously strain into Collins glass filled with ice.
              • Top with club soda.
              • Garnish with Fennel Frond.
              Side Note: To make Fennel Frond Infused Vodka- use 3 cups of Vodka and a 1 cup of Fennel Frond infused for 3 days and then strain off.

              We can thank Julia Momose of The Willow again for this cocktail, that she created this week. Julia when we left was already working on a new concoction. If in Baltimore, you should make it a priority to see this young lady at work.

              Side note: To make Bay Leaf Infused Syrup- 1 liter of water over medium heat with one Bay Leaf in the water. Let the water come to a boil, then bring heat down to a simmer for 5 minutes or until water starts to reduce. Then pour the water into a measuring glass and mix in an equal amount of sugar.

              "Autumn Grey" The Willow - Baltimore,MD




              Drink Ingredients:
              • 1 1/2 oz. of Earl Grey Tea Infused  Gin.
              • 3/4 oz. of Jasmine Orange Tea Syrup.
              • 1/2 oz. of Fresh Lemon Juice.

              Drink Preparation:

              • Add Ingredients to shaker.
              • Shake vigorously pour into cocktail glass double strained.
              • Topped with Prosecco (Italian White Wine).
              •  Enjoy!
              Side Note: To infuse Earl Grey Tea with Gin:


              • Pour 1 liter of gin over 1/4 cup of Earl Grey Tea leaves in a glass jug and allow to steep for 2 hours at room temperature.
              • Strain dark tea color infusion. Now you have Earl Grey Tea infused gin for your cocktail.
